Setting saddleback copings

I can't find the answer to this anywhere. I'm rebuilding a low front garden brick wall from the 1920s. The wall has saddleback copings which are hollow inside. I've seen people set the solid copings. They seem to bed them, then point between. But mine are hollow so I don't think that will work. Do I just butter the ends as I'm setting them, or is there some other technique? Thanks for any tips.
