We have a gap of about 6-8 inches between and behind a newly installed toilet and the back tiled wall. What would be the best way to box this in?

Stud partition. Maybe a tiled or timber cill on top, or carry it up to the ceiling.
Yeah and put some little alcoves in with a little light at the top to highlight your shampoo bottles.
