I have 2 extractor fans in the bathroom.

I'm looking for 1 switch to operate 1 fan.

I'm looking for 1 switch to operate both fans.

These are typical permanant live/neutral with a switching live connection - timed fans!

If it were DC I'd be thinking diodes but with AC what's done?

You'll need relays & such-like.

What exactly do you want to achieve?

It can be done with a double pole switch using one set of contacts for one fan and the other set of contacts in parallel with the other switch for the other fan.
The only problem with this type of arrangement is (if you used pullcords) knowing what state each switch was in unless there is some sort of indication.
Don't forget a 3 poled isolator for each fan and if you are in England/Wales I take it you are aware of Part P?
