I have a landing light controlled by 3 switches, 1 in the hall and 2 on the landing. I wish to remove one on the landing which is wired as follows.

yellow=common, 2 red=L1, 1 black/1blue=L2

As the wiring is surface mounted (only one that is) up to the roof space, is it safe just to end all these connections with joining blocks & hide in the roof space?

Thanks in anticipation.

effectively you need to link all the wires as if the switch were permanently up (or down) , i.e. L1 and common connected, L2 floating.
You can do this in a joint box in the loft, yes, assuming it is safely mounted, and you dont leave any wires now no longer following the approved routes (line of least surprise)
