What Do I Put In Sockets To Prevent Noise Leaks?

Just installed 35mm plasterboard back boxes in my summer house obviously compromising the 15mm sound panel + 3mm plaster and bubble foil vapour barrier.

Is there any type of putty I can stick into the back boxes to try get some noise isolation back? I've seen some stuff used before in construction sites but not sure if that was for noise or vapour or fire and if it works.

A 15mm sound panel is not very thick even if it is quite dense. (No pun intended).
Unless the sound levels are critical, such as a sound studio, I don't think compromising your existing barrier is going to make a noticeable difference.
