Hi,

I'm replacing my kitchen and the new cooker housing seems to be shallower than the old one and it's causing the cooker to stick out at the front.

The cause of this seems to be the electrical connection box on the wall.
It currently has a 45mm box on the back - I'm wondering if I can replace it with a back box that sits inside the plaster board and if so what size?

It only has the oven going into it.

cooker backboxes need to be deep because the cables are very big and stiff.

If you have surface wiring, you might put the box just to one side of the cooker.

How big a gap is behind your plasterboard?

this can be used, but you'll need an accurately cut hole as it grips by sort of sprung barbs to the board.

On a solid wall you'd use

cut into the brick or block. Most people push plaster round the box to seat it (as well as screws) but IMO sand and cement is easier and has a longer working time.
