I'm getting plasterers in to do a skim coat on all of my walls next week. When they are finished I intend to put down pine floorboards in the same rooms. Can I start the 2-week acclimatisation for the floorboards now - or should I wait until the plaster is fully dry? ie. will the moisture from the drying plaster adversely affect the wood?

Yes they will.
After the plastering is done, ventilate the room(s) more then you would normally do for the excess moisture to escape to the outside world. At the moment the airhumidity is low (between 45 - 50) which will help you.
If you are able to check the moisture in the air in you rooms and the moisture content of your wood you might not have to wait the full two weeks.
