Blocking up external door

I have an old outside toilet which is integral to the kitchen however is accessed via an outside door. The plan being to strip out the old toilet and sink and block up the door and turn it into a Pantry.
 
The issue being the external door. Standard size door however the top of the frame consists of a shallow semi circle of bricks, this irregular shape makes it a little trickier to block up. The door is part of the wall which holds up the first storey.
 
I guess my options are
 
a) brick / block up as far up to the semi-circle as possible and fill the gaps with mortar
 
b) remove the semi circle of bricks and replace with an RSJ creating a more regular shape to block up.
 
I'd appreciate your thoughts on this one,

In that case brick up as far as possible and then fill in with bits of broken slate, tile etc and mortar. The arch is taking the weight above. No need for an RSJ.
