Dot And Dab In Bathroom .... Best Way Forward?

I have removed tiles from the wall. The plasterboard is moldy and falling apart in places.

Should i put new board over the existing boards? Re skim existing boards? or is it better to rip the boards of and dot and dab new aqua board and start fresh on the walls that will be tiled?

If you have time/money, rip it out and start again.

It is not necessary to aquapanel the whole room, but in very wet areas, such as showers it's a good Idea.
 
Aquapanel will require mechanical fixing. Screw into existing studs or create new studs (useful for hiding pipework and for creating screwpoints such as well placed, thought out battens ;) ), or mark where dabs of adhesive are and screw board fixers through these when the adhesive has set.

Use moisture resistant plasterboard for the rest of the walls.
