When you have a Internal wall insulation , why do you need a 25mm gap?

That’s an interesting question

I believe the gap allows and damp / condensation to dissipate - although it’s a narrow, unvented cavity with no drain at the bottom.

I have heard you can have the insulation tight to the wall, then vertical battens to screw the insulation tight and create somewhere for fixing plasterboard.

To prevent water bridging across (the joints in) the boards.

Newer more expensive systems don't require it nor do they require the inner leaf to be built first.

I've used a material called ultrotherm on my ground floor.

Not totally convinced and it was expensive
