I've got an external staircase going down to the cellar. So I'm looking into a way of installing a sump.

Would a small header tank be suitable?

I'm wondering should I install a pump in the sump or would it be best piping the water from the sump to a Saniflo indoors in the cellar.

No doubt this topic has been covered before, and any advise appreciated.

A dirty water sump pump with a float level placed in a hole with a grill is your best option.
These cost about £40 from most big sheds.
Do not even think about using a saniflo they usually choke on a sweetcorn kernel!
