Plaster board edges

I have recently fitted some soundproofing and Plaster board into the alcove either side of my chimney breast. Because it is an old property and the breast and walls were not particularly flat to start with I have ended up with a variable gap where the plaster board meets the flanking wall. In some.places it is a couple of mm, but at other points it is getting on for 10 or 11mm.

I am planning to give the boards a 3mm skim coat, so can I even up the gaps by off setting 3mm end stop bead?

Also, I fixed the boards using battens. Will I need to fill in the countersunk screw holes before scimming, or will the skim just fill them as it is applied.

Providing the screw heads are not proud of the board surface, you will not need to anything other than skim. If they are proud, screw them up.
