Im draining my sons Combi system tomorrow and replacing a couple of radiators but removing one permanently. I intend capping the pipes but just wondering if not being able to bleed the air out of the pipes is likely to cause any issues.

I doubt it. Clearly it's best to remove all of the excess pipework and avoid dead ends, but being pragmatic I would suggest that isn't practicable. The trapped air will quickly dissolve into tbe system water and deposit itself into another radiator (or more likely be released inside the boiler) where it can be bled out.
For a perfectionist the dilemma can be severe, but as you're not a perfectionist (why else would you allow yourself to be domiciled east of the dividing mountains?) the decision to leave a dead end is the most practical.
