Rendering the kitchen walls

I am currently in the process of taking apart my kitchen to do a complete re-fit. As part of this, I am taking all the walls back to brick (except for one) and will be re-rendering with sand/cement.

I have had DIY experience with bonding / finishing coats with plaster, but I've not performed any internal rendering before.

The idea is to render the walls with a relatively thin coat (5mm) of sand and cement (5/1 with a little PVA) using thickness guides from Wickes and then to finish with multi-finish.

The reason that I can't go above the 5mm is that the top half of the wall is already plastered and I don't want to re-do the whole wall if I can help it as it is a relatively large wall and the plaster seems quite solid and smooth.

From what I've read, two coats of render are necessary (scratch coat and a top coat). Is this absolutely necessary if the total thickness is to be around 5mm or can I get away with putting the render on and then using a feather board to scrape the excess off?

My only other concern is actually getting the render to stick to the brickwork. Is there a technique to this or will adding PVA to the mix help? I will be unibonding the walls prior to the render attempt!

The last time I tried anything remotely related to sand/cement, most of it ended up on the floor!.
