Hi - I want to remove this....


and replace with this...

what do i need to do with the cabling?

Ideally remove feeder cable right back to the next termination or ceiling rose. Or fit a maintainance free junction box and hide in ceiling.
 
Really need to see the other side of choc block. Red & black cables? Is there an earth?
 
You need to give that terminal block at the ceiling a wiggle and a tug - Hopefully there is some slack on the cable in the ceiling void.

Well there's a green conductor there, bent over and tucked in behind the choc-block. It should be tested, of course, but it's probably an earth.
 
If not, perhaps you can get that joint inside the new fitting (use a 20 mm grommet around the cable entry hole), and run L, N, and E from here to the connector block on the fitting.
 
You're going to have to get it out a bit further, or cut out the ceiling and sink a dry-lining box in. It looks like you've got (at least) 3 x T&E into that point - so a permanent live to the switch cable is probably joined in behind that mess and must be enclosed.
