The old craftmen used no mortar in the toothing when blending old to new and made the new work a touch high to allow for settlement. The joints were then filled in later.

For real?

What happened if there was no settlement or indeed if the old settled even more?

Straight up noseall, it's what I was told as a nipper by the old boys. I've never done it myself, but I can see their point if you know the area and can estimate the amount of settlement. A new building is likely to settle a bit more than an old one. I suppose nowadays the footings are a lot deeper and probably don't move as much.
