I'm not very familiar with the carpentry terminology, although I've done loads of carpentry work myself (mainly in my own home).

What does 1st fix and 2nd fix carpentry refer to?

Before and after the plasterer's have been in, i.e. 1st fix is all structural.

Just to add on,

1st fix carpentry floor joist then and carry up to the roof section, then complete with roof tiles then 1st fix for plumber & electrician while there's no floorboards down and carpentry 2nd fix floorboards etc

That's moot - it's difficult to plaster before the floorboards go down.

The plasterer goes after the 2nd fix carpentry with floorboards and door frames

Well that's completely cleared up any confusion.

1st fix. roof, floors, door casings, window frames, stairs, grounds,
Then plasterers.
2nd fix, architraves, skirtings, doors.
Final fix, door furniture, kichen units, etc
At least thats what we used to do
