The previous owner removed a light from the ceiling - yes all of it. Now there are just 3 wires - feed in, feed out, and switch wire. How can I tell which is which ?

If you have a multimeter, then you can identify the switch wire quite easily.
With the power off (remember to test for dead), meter between the red and black (or brown and blue on newer cables) cores on each wire in turn, on a continuity test mode, while turning the light switch on and off. On one of the wires, you will find you have continuity between the two cores with the switch in one position, and infinite resistance with it in the other - that is your switch wire...
Coljack, Was thinking about this recently, im well aware that when moving you have to leave ceiling fittings and bulbs but what about wall fittings, if you take them with you do you have to replace them with something or not? I had a look online but couldnt find a definitive answer
