There are a few ways to do this but I would (space permitting) plase a FCU adjacent to the cooker connection unit and connect to the CCU in as big a cable as you can fit in the FCU and then connect your hob into that.

Starting current will also depend on switch start of HF control gear in the light fittings. If you done have to use a contactor don't as it is one more thing to go wrong. I also aggree a din rail timer in an enclosure would be best.

If you want to use most of the equipment via HDMI connections then this will limit you selection, also some models will switch the video from HDMI but dome seam to pick up the audio from it so you would still need your fiber or coax fro digital audio

I would say make some as well, you can buy the quality of cable and plug you want and just solder them up.
