The roofing work in the pictures looks perfectly water tight and dare I say maybe above and beyond! 11 out of 10 for effort to the roofer. Chimneys are notoriously bad for leaks and more often than not it comes from the top. Get the chimney re flaunched and see if that helps.
I don’t usually comment on posts on this.... trying to soaker a single lap tile is ridiculous and damn near impossible unless constructed in a way that is well over engineered! They invented secret gutters for flat single lap tiles.

This is quite interesting really. Single lap tiles can’t really be soakered unless it’s a secret gutter but then how is this achieved with a small chimney straddling the ridge? I’m not dismissing what’s been said but I’ve had it out with a very argumentative clerk of works. Opinions??
