Managed to finish the work on Sunday.
The thin springs don't seem to do much other than probably pull the metal bracket up during installation:
Then, once I had undone the nuts holding the copper pipes, I was able to lift the tap enough to get access to the two bolts that were holding it...
Nothing at the rear. But I just managed to remove the plastic cap, and unscrew the grub screw and it seems the tap is now moving up and down easily.
It seems that if I undo the nuts holding the copper pipes I should be able to remove the tap and the get access to the bracket from above.

I have recently moved into a new flat and would like to change the kitchen tap but have never seen before a mounting bracket as the one in the attached photo.
Anyone could advise me on how to uninstall it?
Also, the hex screw to remove the lever has been completely rounded so any ideas on...
