That's a good idea actually. I'd feel more comfortable using a grinder as it avoids hammering/jolting the slabs which could break their bond with the mortar.
I'll give it a go and, as you said, hopefully it will weather out over time. Thank you!

I've laid a patio in the back garden. Happy with the result apart from one slab in the centre which is not flush and is causing a trip hazard. My own fault when laying it.
I'd like to remove the high point so it's less of a hazard. Of course, I could take up the slab and relay however...
