main one being baths off the cylinder (gravity) with large qty of hot water avalible, then shower off the combi for balanced mains pressure

could cost more to replace it than how much you'd save on gas usage while you're there.
if it's not got controls (room thermostat, hw cylinder thermostat) then adding these plus the appropriate zone valves and pipework alterations could save you...
hard to tell but it looks like 22mm to me going into the HW cylinder, which should mean it's not gravity HW but i can't see anything suggesting it isn't.

no need to split the earths into the socket, they normally run on a metal bar between themselves and the faceplates screwholes (least the last plastic double socket i saw did)
earth lead to the back box, if it's a metal faceplate then always fit it.

it sounds like your completely out of your depth,
doing something wrong like blocking the vent pipe would lead to disastrous results (unvented boilers without pressure relief can and will turn the water to steam and potentially explode!)

is the shower pumped?
one problem you'll possibly have straight away is mixing low pressure hot water (gravity) with high pressure mains cold water.
second problem, the HW vent pipe in the loft isn't the best place to draw off water as it'll be at the lowest pressure...
most still require this to be a dedicated feed to the pump, whether its tee'd or flanged,
imagine if you open a tap upstream of the pump, it will more than likely draw air through the tap rather than the tap running with water out of it...

try the shower on slow, and try rjm2k's of moving the temp past the safety stop.
could be the thermostatic cartridge has had it or there's a blockage in the hot water feed to the shower (check the filters if it has them)
is it a recent problem or has it always been wrong?
if you turn the shower down (slower flow, not colder) does it get warmer?
are your other hot water taps working correctly?
can't confirm that the HW is gravity myself from the tank photo, needs to be wider angle so we can see full extent of the pipes in the bottom left.
