Link wire between 1 and 2, or both wires together into either 1 or 2. Proper way; involves tracing cable to point of origin (usually a wiring centre), linking there and then disconnecting/removing the cable run to the stat. With the cable dead the stat can be safely removed.

Bridge 1 and 2 (red and yellow) or: simply leave the stat permanently @30 degrees (Less lazy options are available)

In a word, no. You need a press gun with the right jaws for the fittings. The fittings are specific to the pipe. You might ask Roth who stocks their "Laserrohr" local to you, and then ask that stockist who buys that piping system. That person will have the right gear! Most plumbers won't...

AFAIK what you're trying to do can only be done with Vaillant's own proprietary controls. Happy to be corrected if anyone has achieved this using third party kit.
