What do you have? Decent ones like a Honeywell will have Tpi which is designed to give more a constant temperature by firing the boiler on and off regularly

Cut it out! Not a job I'd recommend to a complete novice so maybe call someone out. As Picasso said, the reason it's probably stopped working is it's overheated. You could try and reset it but not much point if there's a lack of water in the system.
