    Clamp on cylinder stats are liable to fall off, causing the cylinder to overheat. You'd have the immersion thermostat set to the higher temperature, but that still leaves you with a scald hazard, unless there are TMVs fitted. You shouldn't try to by-pass the immersion thermostat, not ever.
