You mention a good led display system however you should be looking for an LCD display system which will give you full text display which will be much easier to use.
Look at texecom premier elite, pyronix euro mini.

No the sounder is designed to alert if opened however the noise is brief if your removing the battery. So far I have found the batteries last much longer than 2 years. If the panel is in engineer mode then only the sounder goes off.

Well from what I can gather the mains frequency is 50hz and the clock relies on this to accurately keep time. If this is somehow corrupt/incorrect then the clock fails. I assume mains frequency is constant so can only assume the failure is in the psu/panel side.
It kind off makes sense as texecom has a similar issue and it is down to the power supply. However texecom has a menu option to use the crystal which I assume is some kind of internal oscillator. Going on this logic you may have a psu issue. Would be interested in other answers you get to...
Never tried to turn the final bleep off but it is in engineer program under volume control. If its the B setting then volume control. Exit B. Try 0. It's usually set to 1. You access to engineer mode will show in the log.
