    Remove the non return valves from back of the valve, then try it. if that solves the issue try putting in inline nrv's that need less pressure to open them you can fit these any where between the pump and the shower valve.

    If that is a two handled mixer I have not seen one with a plastic valve for a long time, they are normally plastic on single lever mixers with a square spline, you have got to either replace the tap, or know the manufacturer to get a spare cold valve now that you have broken the spline.

    Turn off the pump electrics and see if the temperature comes back to normal levels, if there is a handset and hose then remove the handset and lower the hose for a couple of minutes then try shower again. I have a feeling that your hot water is stored too high in temperature.

    Richard C, has pointed out two important points too you never fit nrv's before pump, do not install pump too far from the cylinder. 2 meters for a 22mm pump 3 for a 15mm but the closer the better. Supply pipes to pump should also be independent for pump. What model is it?

    With out going all high tech simply with your hand will do, pipe on the left as you are facing the shower should be hot, if the temprature cools on this pipe when the shower cools then its not the valve. Is the shower pumped?

    I know mate but it does not mean there is even pressure on both sides. Salamanders are notorious for air in impellors and loosing pressure on the hot side of the pump.
