To rip it out and start again - or not

I would try to minimise any joins in an inaccessible place. 20 joints is just frightening. I would only consider using copper bent and soldered to minimise joints in an area like this.

Combination boiler: ghost-like hot water fluctuations

Sounds like in both instances the plate heat exchange is partially blocked. Drain the central heating system first and refill a couple of times to clear existing dirt out of the system. Then remove plate heat exchanger on boiler and flush through with brick acid. This should hopefully...

Oil Boiler position in relation to Oil tank

    Grandee oil boiler cutting out

The diode is a flame sensor it detects the light of the flame. It is used before the control unit starts the ignition sequence to see there is no flame and then again after the oil has been switched on to ensure a flame has been established. Any fault on either signal and the burner will...

Any downsides to a 400/500 vs 300 uvc?

4 showers each taking 10 litres a minute for 10 mnutes requires about 400 litres of water. About 2/3 of which is hot so 300 litres should do it. acv tank is just tank within a tank it gives a much bigger surface area therfore heats much quicker.

Any downsides to a 400/500 vs 300 uvc?

Go for a tank from acv. Tank in a tank they have amazing reheat times only limited by how fast you can supply the heat. You can therefore have a smaller tank provided the boiler can keep up.

    Grandee oil boiler cutting out

If the burner is lighting and you hear the bang. It comes down to dirt on photo cell. Or photo cell fault not detecting the light. Or pump solenoid valve/solenoid cutting the fuel off.

LPG vs. Oil in modern times.

No you pay for install of the tank. YOu can then transfer to another supplier. I assume there is some payments going on between the suppliers behind the scenes to cover costs of tank.

LPG vs. Oil in modern times.

Nothing stopping you having both since you have both boilers just connect them both up to the same system. My preference is an lpg system boiler and unvented cylinder or oil boiler with unvented cylinder. Both will be more reliable than combi and give better water delivery.

    Can you add a hot-water tank to a Combi-system?

Old and new don't mix well. Or if they do it's expensive and never worth it. Either old fashioned or new the choice is yours.

    AirSource

They are giving away wood pellet boilers at the moment. Get it finished quick and then get one installed for free. :-) I would go with a passive house then you don't need any heating.
