You're right, it doesn't need to be wired in a ring and this is probably your problem.
First of all, isolate the CU and remove the bit of cable running between the last light & the CU. Remove it from both the light & CU.
Secondly, you do want to be wiring it up as per that first...
Why do you need to make sure it's 50mm deep? The only reason for that would be if you don't have an RCD on the ring. It sounds like you've already started, so you may as well bury them under plaster. If you haven't, if cosmetically it's not a problem then run them in MT2 trunking.

Is it spur after spur, or is each spur taken from a different socket?
If they're all from seperate sockets, they comply. If it's 2 or more unfused spurs from one socket, it doesn't comply.

SWA, more often than not from a non-RCD protected MCB in the consumer unit. There are no specific legalities, can't remember the wording but BS7671 says adequate depth so as not to be damaged, best practice is considered 18".
