I definitely did put linseed oil on the top and underneath the worktop, what's the consequences of not putting it on out of interest ?

I have installed a new beech worktop but while doing the kitchen, the worktop as shown have mismatched colours , what oil can I use to make them the same and any ideas will help. ? Thanks Debo
