you can get water proof mdf (its black) it costs money though.
even water resistant mdf will absorb water if its outside for long enough.

the thickness of lead is determined by the size of a single piece. code 4 lead should not be any longer than 1500mm long otherwise it will fail after only a few years.
your loft sounds very damp. have you checked to make sure that the vent from a bathroom extrctor is not discharging straight into the loft? it should be vented to the outside.
