    Electric Oven Tripping RCD - Not the heating element?

    Check for highlimit stat/sensor protecting element , I had 1 last year , was fan jammed from worn rubber spacer, fixed that and it worked. Sensor was fitted into tube on top of main oven. It's not a cooling fan.

    Id be inclined to trace all vir cables to where ever they go and run new cables, ready for a change over in areas agreed with hotel management. Is there room to mount new board beside existing, even temp fitted, until old board disconnected.
