    With the height of the brickwork, I would just tooth in, but plan your bond because garage doors never to seem to work brick. As for the pillars, I assume you mean they're two half bricks, aka one brick thick. Pictures would have been good.

    50/50 (half SBR to half water). One coat should be fine, you could apply two, it's simply to change to high suction background into a low one. Tacky or not, doesn't matter for tiling.

    Nothing to worry about. Mortar strength should always be made weaker than the material it separates/bonds (mortar does both, it keeps bricks/blocks 10mm apart and bonds them together at the same time too). Any repointing, the mortar MUST be raked back 25mm/1 inch before applying new mortar.

    The skirting could do with being one piece. He probably didn't take the part off when the flooring is because it could have danamged the floor covering trying to remove it. The wall is just a skim some easi fill on, sand it, and paint up.

    Doesn't matter which way round a tray is fitted, some quadrant trays have the waste in the centre on the curve, you you would walk over the waste on those. I would guess the joists stopped the tray from being fitted the other way round due to the location of the waste trap, but either way...
