    Inverted roof - possible/advisable?

It would depend on how much insulation you want on the roof really. If you went along the lines of say 100mm you could probably keep the existing windows. The problem with the inverted roof would be you have an old roof under it and if there is any wear and tear you then need to lift everything...

    Inverted roof - possible/advisable?

Weight may be an issue depending on how much ballast is used. Not really anyway you could know 100% unless you knew what the wood was like under it. You could put some insulation on top of your current roof and then put down some EPDM rubber or a 3 layer felt system on top of the insulation.

    Valley tiles v Cut valley

This link has some different variety of GRP valleys ( https://www.roofingsuperstore.co.uk/browse/pitched-roofing/valleys-1.html ) GRP is quicker to fit than lead and obviously cheaper. You will only need a small bit of lead at the bottoms and a lead saddle at the top of the valleys.

    Roofing tiles

Redland call their red colour terracotta and they aren't clay. Not saying you're wrong about the clay thing though, especially if they are pointed. I sometimes skip over text....

Sand and Cement Slurry as flooring compound?

I'm no expert with this but I have done some small repairs in my own garage. I tend to throw in some gravel with the mix and it helps to strengthen it. Just sand and cement would likely crack over time.

Stop water running behind gutter, off a flat bitumen felt roof

    Opinions please.

So much exposed felt man :(

    Opinions please.

The tiles should be overhanging the gutter by a minimum of 50mm. The hopper shouldn't be used for this situation or it should be lowered and a downpipe fitted onto the gutter to go into the hopper.

    Horrendous Felt Sound (VIDEO)

The issue may be at the eaves. Do you know if this felt is the same one that goes into the gutter or did they cut it back and install either a plastic drip or a reinforced felt?
