    Without seeing pictures its hard to fully imagine... How deep are your rafters? Are the purlins on the outer face of the rafters? But i was thinking something like these screwed to the rafters. Not too big but big enough to get a good fixing for PB's...

    roof lats screwed to the exisitng timbers would be sufficient to screw boards to. but you would probably need some 3x2" noggins to reduce sagging.

    The lintel in hall way wants to be a bit longer imo. Hard to tell how far its bearing on the wall as someone has gobbed it up with cement. so buy a new one and cut down if required. Replace the wood with a new full length piece if you want to have wood there. Or you could square the brick work...

    You could screw to rafters using penny washers under the head of 100m screws. and stagger the joints of the boards and insulation. could even lay in opposite direction too. You'd need some long plaster board screw though and i don't know what lengths they come in???

    I'm no expert but would have thought doubling/tripling up the timbers would be more than adequate. 2x8" are beefy lumps alone so 6x8" would be pretty substantial!

    Hmmm interested in this outcome, i want to use a redundant oil fired range flue/chimney for the same thing. I suspect you might have condensation tracking back down and a potential build up to think about due to a long vertical span. that's why I've held off on doing mine.

    new brick and pointing up need to be done in in the middle area's. and same with the roof. dig that crap out and point up with cement if small gaps, or used half brick slices and cement if a bigger gap. a better ridge flashing might be in order too. hard to say without a close up.
