    If you like a matt finish (and who doesn't?), just use it. If you want a really good quality, washable matt, go for Little Greene's Intellimatt. If you use a cheaper one, it's probably easier to keep a touch up pot handy rather than trying to scrub marks off.

    Why on earth do you want to paint a stone surface with a gloss finish? It will look horrible and take value off your property. A good quality masonry paint is all you need, or, if you insist on the 'nuclear option' then go for an oilbased eggshell such as Little Greeen's.
