    Please note the bit where I said "usually run off a single phase 240v 20 amp supply" I didn't say Always even at 32 amps, it's hardly a huge load when compared to other items available for installation on the domestic electricity installation of a property.

These boxes usually contain DOL starters for motors/pumps and can have a remote start stop button, or as already suggested they can simply contain contactors for other pieces...

    Since you've already disconnected the cable at either end, simply choose which one you wish to use as live and neutral and wire it that way throughout the circuit. It ultimately doesn't matter with a lamp on its own. Just ensure that you wire the correct polarity from the plug to the dimmer...
