    Sounds like your thermostat on your bottom immersion(night) has failed and was letting power to immersion past its preset setting(65-70c), eventually the overheat trip kicked in and killed the power to the immersion, get electrician to investigate, and replace and reset any deffective parts.

    Hard to see from your pics how they are connected, can you take pic of switch turned further round so we can see connections?. you need a rewire, old vir`s at the 2gang switch and old singles at 1gang.

    These switches will be wired in parallel, you can wire as many of these as you like. Your mixing these up with conventional 2way wiring, which requires 2way switches for first 2, then intermediate switches(4wires) for the rest.

    Are you sure that the element is faulty?, is there a reset built into the fire in the event of overheating, does the thermostat operate correctly?. If the element is faulty, try getting the manufacturer to replace, i would expect element to last longer than 1-2 years(normal usage).
