Best way is to run a new cold water pipe from the header tank to the cold side of the mixer.

The flue gas temp needs to be high enough to prevent condensation from running down into the boiler but not so high it wastes fuel. It will be set during boiler annual service and is not something a home owner should mess with.

Looking at those photos it might be worth checking your tank for water ingress.

Is the tank outlet higher or lower than the inlet to the pump.

You won't keep them out. They can get in through the tiniest gap so small that you can hardly even see it. Worse thing you can do is apply torque to an immersion nut. Pretty much guaranteed to wreck the tank.

Maybe the ball valve in the header tank not shutting off completely. Any sign of water dripping out of an overflow anywhere?

I had this problem and just installed a matching wood splashback - just stuck it on with RTV.

If it quickly re-blocks then it could be that root penetration is trapping material.

Fluctuating airflow over the roof can cause the chimney draft to become unstable in some weather conditions. In my experience a properly functioning spinning chimney cowl sorts it out.
