Boarding Unlevel Joists

What's the best way to board a ceiling where the middle joist sits lower than the other two either side? Also it seems the middle joist varies in height along its run, presumably for fall on the flat roof?

Would you batten to the side of the joists and then screw the plasterboard up to that?

you could do, but chances are something else will be ‘out’.
depends how bad it is and if its just the one joist?
 
have you looked above to see if some heavy object is standing on that joist?

rip 10 mm off the bottom with a circular saw.
or cross batten the whole thing with 25mm roofing batten notching out the low joist.

Rightly or wrongly, as it's only a small section on each ceiling, I attached 2x4 battons to the joist that was lower then fixed the pb to that, going to inject foam through holes in the PB for additional support. Ghetto I know but does the job lol
