Been thinking about this some more, main things for me on considering combi or unvented was for shower pressure and pump would be too noisy in a bedroom airing cupboard.
Realised the simpler thing to do what with my flowrate would be to upgrade system as it is keeping the CWT and HWC, but move the HWC down a floor to a cupboard that already has piping and power, then get a pump in there. This way I keep a limited cold store if mains go out, a hot water backup if boiler goes pop and I don't need to worry about what pressure/flow I have, just get a decent pump.
This option covers all the angles I need and the cupboard the HWC will go to is massive so I can always increase its size if I ever need to.
I think OwainDIYer was likely getting at this a bit with his mixer option.
