Hatch with sliding glass doors

I want to knock a hole in a wall and crease a 'serving hatch' type thing. This is in my physio clinic and would be used to greet patients in a similar way to in a doctors surgery.

I'm not sure whether to start by finding out what size of glass is available and going from there, or whether to decide on the size of the hole and try to find glass to fit.

Also, I need to be able to lock it.

If anyone has any idea how to go about this, or indeed is the best tradesman to do it (if I don't do it myself), then I would be very happy to hear from you.

Glass can be cut to size, you could use three panes of georgian wired glass staggered to create a small opening which would not required any locking and wired glass is more secure but would still allow you to talk to visitors.
