Interior Windows - Varnishing ?

I want to spruce the interior windows in our house, currently I think they have been stained with Ronseal 5yr Woodstain - Rosewood....

I wanted to spruce them up by lighting sanding and applying some Rosewood quick drive varnish - is this a good idea ?

Secondly i notice that the part where the window meets the wood is flaking away, i guess it needs filling. What do i fill it with ? Its not flaking too much...and can i varnish over this filling.
