My suggestion on cable sizing, would be to use the same size CSA that exists on the circuit you are altering.
Any joints should be easily accessible for maintenance, inspection and testing purposes. You can now use MF (maintenance free) type junction boxes, that are allowed to be hidden within walls.
But if you can make the joints at the accessories, I would recommend you do that.

would i be able to joint 1.5 and 2.5 twin and earth as thats all i have to use its for a double socket that will be only be getting used for a kettle or toaster

If you are extending the circuit no, if you are are installing a 13A FCU(fused connection unit) Then cable protected by the FCU can be 1.5mm T&E

How much do you think 2.5mm T&E costs???

5 metres will probably cost you about a fiver.

Do the job correctly, ffs!

A kettle is about 13amps on its own, a toaster about 5 amps.

Quite a lot for a bit of 1.5mm² cable.

YOU might only plug one thing in to those sockets, but the next person?
Start up a washing machine and a tumble dryer and there goes your weedy bit of cable - up in flames.
