New garage roof

Hey all,
My first post on here so if I've done anything wrong please feel free to correct me :p

Background:
I live in the exceptionally sunny and warm (cough) Costa Del Aberdeen and have a concrete panel (6mx6m) double garage with asbestos cement roofing sheets which are mounted onto metal z-purlins with a single (gentle) pitch. This is my first house and has been a 'back to brickwork' refurb so my wallets a bit thin. I have no experience with roofing but am fairly handy and pretty up for the challenge.

Conundrum:
Asbestos sheeting has seen it's day (...and some) and safe to say is no longer watertight.

Progress:
I've found a company in Aberdeen who will take the sheets once I have removed them for a small fee (£230 a tonne). I have found another company who will supply and deliver box profile sheeting, fixings and flashings for a reasonable sum.

Concern/advice required:
My concern is once I have the box profile roofing fitted that I may have condensation issues. If so, how do I go about rectifying this? I was thinking putting insulation panels in the gaps between the box profile and the bottom of the z purlins then placing a treated ply ceiling onto the underside of the purlins creating effectively a second skin. Is this the right thing to do? Am I making a fuss over nothing? Will the air in the ridges of box profile above the insulation sheets cause condensation issues? I'm trying to do this on a budget but I also want to make this as 'habitable' as possible due the this being our effective utility room!

Looking into the future has never been a strongpoint :p
