Had a go with the umbrella plasterboard fixings. I tried with gun but the bit that's supposed to grip the screw seems bent and didn't grip it. Do I need to get a new gun?

Instead used a repair bit to hold the sharp bit in place and turned screw until tight.

I also noticed some if these umbrella fixings are designed for double thickness plasterboard. How would u know if your drilling into double or single thickness?

Until you drill the board you don't. TBH most domestic walls will be single skin unless there is a fire rating requirement. I generally have 2 or 3 sizes in my kitso that I can tackle whatever I find.
