Right settings for Nest (3rd gen.) and OpenTherm

Hi all,

I connected my Nest to my combi boiler (Viessman Vitodens 100) using OpenTherm.
I navigated through the settings menu and I moved from On/Off to OpenTherm. Thermostat also asks for parameter about water temperature.

What do you normally choose?

Moreover, accessing to my Nest using Nest website, I see now that two gauges are available: one is the thermostat with its temperature, the second is hot water. Hot water is always marked on, however boiler is off. What does it mean? I tried to find some guideline about it on Nest website without luck.
