Squaring the curve

Next year I am having the front of my house re-rendered, because the original one is now beyond hope! The two existing windows have rounded rendered reveals, which I would prefer to be square.

Is it best to pack this out with mortar or would it be easier/stronger/better to replace the corner bricks (which I assume had been roughly shaped with corners chopped off) with new ones, thus creating a clear line to follow with thinner render/corner mesh?

Out of interest (I'll be getting someone else to do this) - we are going to have our front (ground floor) bay re-roofed with a pitched one, connecting to a new closed porch. Which is done first - the rendering or the roof structure?

Roof first then render.

Corners can be squared with mesh and/or beads without replacing brickwork.
