What's so special about these end fittings?

(vs a compression nut and a copper olive fitted to PEX with an insert and stuck straight in)

Does it do anything special? Is it a deliberately odd size to bump the price of the manifold up? Are there other manifolds available?

I'm after a route from 22 mm copper to/from a boiler teeing off to four 15 mm PEX radiator runs then continuing down to another floor in 22mm PEX.

There's no reason why you couldn't use that manifold for what you require.
They are generally used as a central point in a cupboard for example, with pipes leading away to appliances.
